John from and Wendi show you how to make vegetable garden tacos and green smoothies using fresh-picked leafy green vegetables from your garden.

In this episode, you will learn how to prepare healthy meals from the vegetables you grow in the garden. You will learn how to make 2 simple recipes that anyone can make.

First, you will learn how to make a green smoothie. John will take you around his garden and pick many different types of leafy greens to use in his smoothie. You will learn about some of the health benefits of each of the greens as John harvests them.

Next, John will blend up the green smoothie and share with you all the other ingredients he will be using including fresh made orange juice with rind, blueberries, dragon fruit, and fresh-picked leafy greens.

You will discover why John only uses a vacuum blender to blend up his smoothies and other blended creations because it can preserve more nutrients, and eliminate bloating and gas caused by dissolved oxygen normally found in blended smoothies.

Next, Wendi will harvest fresh vegetables from John's garden and share some of her harvesting techniques with you. You will learn why she is harvesting certain parts of the plant for certain flavors and textures.

You will learn how Wendi will turn the fresh ingredients into garden tacos using red bok choi as the “shell” and a fresh-made salad with a pineapple macadamia nut sauce as the dressing. You will learn how she includes raw and steamed sunchokes aka Jerusalem artichokes and steamed purple sweet potato that John grew.

Finally, Wendi will assemble the vegetable tacos and you will get a taste of the tacos.

After watching this episode, you will learn how easy and healthy it can be to use your homegrown vegetables to make delicious meals from garden to table so you can eat more of the food you grew, instead of buying it from the grocery store.
